Black Garlic Tonkotsu
Tonkotsu pork broth, pork belly chashu, ajitama egg, kikurage, menma, scallions, nori, and black garlic oil.

Karaage
Marinated chicken thighs twice fried in beef tallow served with a spicy dipping sauce.

Miso
Tonkotsu pork broth, minced pork chashu, ajitama egg, kikurage, menma, sweet corn, scallions, and butter.

Red Dragon Margarita
Lalo Blanco tequila shaken with pomegranate, lime, and agave. Finished with a lava salt rim and charred rosemary for aroma.

Deviled Ramen Eggs
Ajitama eggs deviled and topped with sliced pork belly chashu, wasabi, and scallions with a sweet sake sauce.

Shokupan Snowfall
Clarified whisky and rum milk punch with banana, dark chocolate, and toasted milk, finished with a delicate “snow”.

Haji Moto Ramen & Sake Bar is Georgetown’s first restaurant dedicated to ramen, offering an energetic space shaped by traditional Japanese technique. The restaurant specializes in classic ramen styles built on rich, slow crafted broths, including tonkotsu, chicken shoyu, and a fully vegan option. Nearly everything is made in-house, from the broths to the noodles.
